Vermont Cheese Platters:
At Bevo we’re crazy about cheese; it doesn’t matter whether it’s summer or winter, one of our favorite appetizers is a Vermont cheese platter. Cheese platters are an easy way to satisfy a lot of people-who would turn down a toasted crustini with roasted garlic spread, sharp cheddar and a thick slice of smoky summer sausage? Certainly no one I’m friends with. That’s why a cheese platter is a great idea for an appetizer for a large crowd; it takes a minimal amount of prep, looks beautiful and tastes even better. It also offers a lot of room for creativity. How about fresh blueberries to complement brie? Or a homemade apple butter to pair with sharp cheddar? It’s up to you, have fun with it!
This summer we have been particularly wild about Pyramid Scheme from Champlain Valley Creamery. This cheese is a beautiful, soft-ripened, triple crème made from cultured organic cow’s milk and cream with a layer of vegetable ash between the paste and rind. Like so many of the artisan cheeses produced in Vermont, Pyramid Scheme will add a unique diversity to your cheese platter.
So, for your next event, maybe move the pigs-in-a-blanket off to the side and let a decadent cheese platter act as the main attraction for your guests allowing them to enjoy and experiment on their own.
